Mash bill: 74% Corn/21% Rye/5% Malted Barley

Transferred 11/16/21 into first inflection Spanish Pedro Ximenez (PX) Sherry Casks for 16 months

Transferred 3/27/23 into first inflection Portugal Port Barrels for 33 months

Nose:

A luxurious bouquet opens with rich dark fruits - fig, raisin, and plum - layered over a deep, honeyed sweetness from the PX sherry finish. Notes of toasted oak, brown sugar, and dark chocolate rise through with time in the glass. Hints of candied orange peel and dried cherries from the Port cask round out a nose that promises decadence.

Palate:

Velvety and full-bodied, the entry is lush with stewed fruits, date syrup, and red berries. PX influence brings waves of molasses, toffee, and spice cake, while the extended Port finish adds blackberry compote, cassis, and a tish of espresso. Mid-palate, the American oak reasserts itself with vanilla, charred caramel, and warming cinnamon.

Finish:

Long and evolving, with layers of dark chocolate, wine-soaked oak, and a lingering warmth of baking spices. The Port cask leaves a final impression of fruit preserves and soft tannins, balancing sweetness with structure.

Overall:

An opulent and contemplative pour, this bourbon showcases the power of extended secondary and tertiary cask finishing. A dessert-like sipper, perfect for slow evenings and special pours.
