Old Hell Roaring Bourbon, Yes Please.
Old Hell Roaring (OHR) takes its name from a trailhead in Big Sky, Montana, one of my favorite vacation spots. The name resonated with me because it evoked the image of a tough Clint Eastwood movie - a genre I enjoyed watching with my Dad while growing up. OHR is a double-barreled bourbon with a unique twist, but let's start with the basics. The foundation of all CWS's bourbons is straightforward:
Always aged in 53G barrels or larger...time cannot be rushed or imitated.
Always harvested from a single barrel, never blended. I find the beauty in small-scale craftsmanship.
Our bourbon is aged for a minimum of 2 years before being transferred to the second cask - no exceptions.
The second barrel tells a different tale and is where the refined profile emerges. I collaborated with a cooperage in Minnesota to explore a unique process. While a standard bourbon barrel is typically prepared in 10-15 minutes, ours undergo a process lasting multiple hours. Drawing inspiration from the slow and low technique of BBQ, I toast the barrels for hours to extract the maximum flavor from the wood, enhancing the rich sugars that arise from extended toasting. I infuse them with a delicate light smoke and then age our straight bourbon for an additional 4-6 years. The latest barrel acquisitions from local liquor stores are being released at 8 years. OHR was introduced in November 2017 and has already garnered numerous accolades nationwide, including Double Gold and Best Bourbon, earning an impressive 89 points in Whiskey Advocate.
